Today I'm thankful for.....


4. My yummy and (mostly) nutritious breakfast!

This morning I felt like making something that would actually leave me feeling satisfied and ready to attack the day. I decided to be "brave" and try something new.
I had some Quinoa on hand thanks to Alysun's yummy "Quinoa Bread" recipe that I love. I've used it in the bread and occasionally in soup, but have never ventured to try it on it's own!

For those of you like I was a couple of months ago, I'll give you a very brief description of quinoa. Quinoa is pronounced (according to dictionary.com) Keen-wah or Kee-noh-uh. In the states I've only ever heard it called "Keen-wah", but on Australian's Biggest Loser (one of my guilty pleasures!) they pronounced it "Kee-noh-uh". Most likely no one will know what you are talking about either way so just say it with confidence!

According to "Vegetarians in Paradise" ( believe me, not something I had ever heard of before. It simple showed up in a search!) quinoa is "highly nutritious and can supply us with all of the body's requirements: carbohydrates, fats, protein, vitamins, minerals, and fiber".


It cooks just like rice. Two parts water to one part quinoa. Simmer for about ten minutes then fluff. Very simple!


I topped mine with frozen blueberries and raspberries, a dash of cinnamon, a splash of milk and a sprinkle of brown sugar. It was delicious!!! And super simple! Plus I was FULL until lunch even after doing the Shred.

I must add how extremely thankful I am for Earl Grey tea. I love many, many teas, but Earl Grey always comes out on top.

A little milk, a little sugar. Ahhhh, perfection! Today I'm very thankful for the simple pleasures!!

Yummy breakfast! I must say, I would have never thought of eating quinoa for breakfast. If you're feeling more adventurous, I highly recommend buckwheat - cook it on the stovetop and add a little peanut butter and milk towards the end. It is quite filling. However, it does take a little while - maybe 30 minutes to cook.

Breakfast! You are brilliant. I had never thought about it. I was just discouraged because my family suddenly declared, "NO MORE QUINOA!" I didn't want to make it just for myself, but I really like the breakfast idea.

I am also a tea drinker. I love Constant Comment, mint, and English Breakfast (and Earl Grey too).

I've never tried Quinoa...to be honest, I've never even heard of it! I'll have to try it out now!

And someday, let's promise that we'll sit down together over a cup of Earl Grey and chat, okay?! :) Maybe before one of the many family wedding's we'll have! loL!
